This role is very much hands-on, requiring attention to detail, employee management skills and a positive work attitude to maintain energy and hustle in the kitchen.Responsible to: Operations ManagerMain Tasks:1. Manage the preparation of food for Lunchtime Menu and Catering Menua. Ensure all food is prepared as per recipe cardsb. Ensure meals are produced on time with sufficient quantity, and highest quality standardsc. Maintain stock levels of all kitchen supplies – communicate the ingredients/supplies required and recordd. Create afternoon preparation lists and morning of preparation lists for kitchen hands and delegate cleaning duties2. Oversee and develop culture with all kitchen staffa. Ensure all staff are aware of their duties and what is expected of themb. Work to build team culture that feels natural and pushes performancec. Teach new staff skills they require to perform their roles to the required standardd. Delegate duties to kitchen staff as per the menu requirementse. Oversee and monitor the work of kitchen staff to ensure all tasks are done as requiredf. Give staff feedback on their performance to enable staff development, and report staff performance iin timely manor3. Manage kitchen stocksa. Our goal is to be as sustainable in our food production as possible – minimising waste, utilising by-products, preserving meats/veg as they come into seasonb. Minimise food wastage through preparation methodsc. Ensure proper hygienic storage methods are utilised to prevent food loss
4. Ensure staff are working safely and to cleanliness standards at all timesa. Ensure staff are aware of and follow safe work practices at all timesb. Assist other staff in the cleaning of the kitchen at the end of the shiftc. Ensure his/her own work station is kept clean and hygienic at all times
5. Assist the Operations Manager as requireda. Manage the Catering Department in OM’s absenceb. Assist the day-to-day running of the departmentc. Carry out other tasks as required by the OMd. Pay careful attention to the operating budgets of the department to ensure that costs are controlled to maintain the correct levels of spending
